Light and Easy Recipes and Meal Ideas


I’ve been cooking and baking since I was a kid. I’ve tried so many different diet trends. But over the last few years, I learned that flexibility and forgiveness keep me healthiest of all. I believe in portion control, eating lots of fruits and veggies, but also tasty foods including some sugar in moderation.

My recipes are very ordinary things. I believe that what you leave out, is just as important as what you put in. That’s also why I don’t have lengthy introductions or stories before my recipes. I just like what’s necessary.

My kitchen is small and so is my budget. I’m a busy mom trying to manage work, my kids and this website. I don’t have the money or space in my house for air-fryers, instant pots, pressure cookers, indoor grills and other fancy kitchen apparatus. I like to keep things really minimal and simple. So you might see me utilize my toaster oven instead of an air fryer on here. And instead of an “indoor” grill, I use my waffle iron. I just try to be resourceful with the things I have, instead of acquiring more.

As of July 2021, my life is turning in a new direction, and with that the content of this blog will evolve. This blog is a collection of all the resources God gave me… my love for cooking and baking, writing a little bit here and there, art and graphic design, and my failures and weaknesses.

I am also a member of the WW (formerly Weight Watchers) SmartPoints program, which has given me the tools to successfully manage all the things I love to cook and eat while staying healthy. So you will see references to WW throughout the site.
