    Just 6 WW Freestyle Points for this cheeseburger that has real ground beef, a normal size bun and a slice of Velveeta cheese.

     

    I used Trader Joe's brand 96% lean ground beef (2 sp), Trader Joe's Whole Wheat hamburger buns (3sp), a slice of Velveeta cheese (1 sp), pickles, lettuce and tomato! The beef is not crazy juicy but not terribly dry either. It's a good tasty burger for weeknight summer grilling for sure.

     

    Recipe makes 4 burgers. 6 WW Freestyle Points each. Serve with corn on the cobb, grilled vegetables or whatever else you like.

To get the pops out easily, just run some hot water on the sides of the plastic cavities (after they are completely frozen). The pops will pull right out.

     

    You should be able to find the Lily's Sugar free chocolate chips at Walmart. I found the Hershey's lite chocolate syrup at my local grocery store (Shoprite). Nutrition info based on popsicles using the Hershey's lite syrup.

  • Yogurt To Go

    Yogurt To Go

    These are my adult version of "Go-gurt" to take with me when I'm in a hurry.

     

    You can use these for road trips if you have an ice-pack or cooler bag to store them in. OR, freeze them so they stay cold and slowly defrost over the course of an hour or so.

     

    I added just a teaspoon of sugar and vanilla extract to the plain non-fat greek yogurt, just to take the tart taste out of the yogurt. If you use Truvia or another zero calorie sweetner, this is a zero point snack.

     

    Recipe makes 3 yogurt packs. 1 WW Freestyle Points for 3 of them.

    This is a sweet refreshing treat you can enjoy all summer long. These are a lot like the red, white and blue pops I posted, but you don't have to heat the oranges or add any sugar or lemon juice. Just be sure the oranges you use are sweet and juicy. I've gotten really dry and grainy oranges before so these pops are only as good as the oranges that go in them. I'm listing these as 1 point each but I don't even think they are a full point. There is only 1 tablespoon of sugar (3sp) in the whole recipe. Everything else is zero.

     

    You can find and purchase these popsicle molds on Amazon through this link. Note for these molds: I like the shape of the popsicles that this mold yields. To get the pops out easily be sure place the blue lid on loosely. Insert the sticks in as straight as you can. To remove after they are completely frozen, just run some hot water on the sides of the plastic cavities. Pops will pull right out.

     

    Recipe makes 10 creamsicles. Less than 1 WW Freestyle Points each.

    Soft Serve Frozen Yogurt Cones

    These are super easy to make. You don't need an ice-cream machine to make this. Once the fruit is frozen, you can assemble the cones in less than 5 minutes. A delicious refreshing treat for only 2 WW Freestyle points!

     

    Note: Magic shell chocolate rim is optional. I barely used half a teaspoon on the rim so I did not count it as a point. For the yogurt, I highly recommend using Fage because it is considerably thicker than any other greek yogurt I have used. I did not freeze the yogurt for this because the frozen fruit provides an ice-cream-like consistency.

    I make this dish on Sunday and save the leftover sauce and meatballs in the fridge or freezer for future meals. Then I just have to cook the spaghetti when I get home from work. For the meatballs, I use 93% lean ground chicken because I dislike the dry texture of 99% lean (but if you don't mind the 99% lean, by all means use it and save 2 points).

    You can skip the boiling part on these pretzels, but they will taste more like pizza dough than pretzels. The baking soda is what gives these awesome treats a very "pretzely" flavor. Recipe makes 4 pretzels. 138 calories, or 3 WW Freestyle points each.

     

    Nutrition information sodium does not include the salt sprinkled on the outside of the pretzel.

     

    OPTIONAL NOTE/TIP for this recipe: after you mix the dough, if you wrap it in saran wrap and let it rest for 30-40 minutes it gives the dough strength and elasticity. If you add this optional step in, just wait to preheat the oven and boil the water until you are ready to roll the pretzels out.

    To get a chewy, tasty bagel, I boil these in water with a little bit of brown sugar. You can skip the boiling part - but I like them better boiled. Use Fage yogurt - that is fresh out of the container. If there is any liquid sitting in the yogurt container, pour it out. I try to get a smooth skin when I'm rolling out the shape of the bagel dough. The smoother they are in dough form, the smoother the bagels will be when they come out of the oven.

     

    The brown sugar used in this recipe may add calories to the bagel. I'm not 100% sure how much of the sugar is actually absorbed into the bagel when boiling. Recipe makes 8 bagels.

    Originally, I made these chicken nuggets with 99% lean ground turkey, but to be honest, they were dry and I found them to be gross. So for this recipe, I used 93% lean ground chicken and these nuggest are tasty and good. Plus this is a very kid-friendly meal. You can make the nuggets in batches and freeze them for future meals. 

     

    For the fries, soaking the potatoes removes some of the starch so the fries bake up crisp. 

     

    Recipe makes 4 servings. 24 chicken nuggets in total (4 servings of 6 chicken nuggets) and about 60 fries (4 servings of 15 fries). The total nutritional information and points value for this recipe as a whole, include 4 tbsp of oil even though it's being "sprayed" on both the nuggets and the potatoes. Nutrition values and points EXCLUDE barbecue sauce or condiments.
