    I promise you will love this! It makes a great side dish for Mother's day brunches, lunches or a dessert. Or just make it for a healthy delicious snack to have on hand.

     

    Note: if you make this recipe in advance, be sure to wait to add the mint leaves until you are ready to serve. All other ingredients can be prepared before hand. The Champagne Pear Vinaigrette from Trader Joe's has a little Gorgonzola in it, so I did not add cheese such as Goat Cheese or Feta to this salad.

     

    If you do not live in close proximity to Trader Joe's, you can substitute the dressing with my easy recipe for Champagne Vinaigrette. I think the points are the same but the nutrition values may differ.

    More fun with these mini waffle cone bowls by Joy Cone Co. I used the recipe I had for mini apple pies, but instead of baking the crust, I used the waffle bowl. This is a super quick and yummy treat you can make in about 10 minutes. No baking involved.

    Just in time for spring! These tasty little treats are a super fun craft to make with kids. Serve them at birthday parties, holiday gatherings, or just a fun snack at home. The "dirt" tastes just like an oreo cookie. 115 calories - 3 points per cup.

     

    Recipe is for just 1 cup, but multiply for as many servings as you need.

     

    You can find the specific Chocolate Animal Crackers used for this here (which are 2 points for 16 crackers).

    Waffle Cone Bowls

    Calories: 252 WW Freestyle Points: 3

    These smothered waffle cone bowls make a good breakfast, or a snack. The waffle bowls are just 50 calories - or 2 points each. I filled it with non-fat greek yogurt, topped with blueberries and bananas that I warmed in a small sauce pot, and sprinkled it with a teaspoon of pumpkin seeds.

     

    If you find that plain non-fat greek yogurt is very tart, the sweetness of the fruit and waffle cone in this recipe balance it out nicely.

     

    Note that the photograph makes the waffle bowl appear larger than it actually is (just being honest). I didn't try to exaggerate this, it's just how the photo came out. The actual size is similar to that of a regular cupcake.

    So moist and chocolatey. I made and revised this chocolate cake recipe 7 times to get it just right. Such a good treat for 4 points. After you slice it, I would recommend putting the extra cake in a tupperware container and freeze it so you don't eat half of the entire pan in one sitting like I did. Not a point friendly day for me. But some good chocolate cake. See video for quick assembly demonstration.

    Apples and Cheddar

    Just a really simple but delicious snack here. Cheddar cheese and apples go really well together. I used 1/4 cup of Shredded Sharp White Cheddar Cheese (which is 4 points) over 4 apple slices (one already eaten from the plate shown here. :D ). So each one comes to 1 point each.

     

    You can pop them in the toaster oven on broil for a minute or two, to melt the cheese.
