    This is a sweet refreshing treat you can enjoy all summer long. These are a lot like the red, white and blue pops I posted, but you don't have to heat the oranges or add any sugar or lemon juice. Just be sure the oranges you use are sweet and juicy. I've gotten really dry and grainy oranges before so these pops are only as good as the oranges that go in them. I'm listing these as 1 point each but I don't even think they are a full point. There is only 1 tablespoon of sugar (3sp) in the whole recipe. Everything else is zero.

     

    You can find and purchase these popsicle molds on Amazon through this link. Note for these molds: I like the shape of the popsicles that this mold yields. To get the pops out easily be sure place the blue lid on loosely. Insert the sticks in as straight as you can. To remove after they are completely frozen, just run some hot water on the sides of the plastic cavities. Pops will pull right out.

    Soft Serve Frozen Yogurt Cones

    These are super easy to make. You don't need an ice-cream machine to make this. Once the fruit is frozen, you can assemble the cones in less than 5 minutes. A delicious refreshing treat for only 2 WW Freestyle points!

     

    Note: Magic shell chocolate rim is optional. I barely used half a teaspoon on the rim so I did not count it as a point. For the yogurt, I highly recommend using Fage because it is considerably thicker than any other greek yogurt I have used. I did not freeze the yogurt for this because the frozen fruit provides an ice-cream-like consistency.

  • Lemon Custard Crepes with Raspberries

    Lemon Custard Crepes with Raspberries

    Calories: 88 WW Freestyle Points: 4

    This custard is light and creamy with a mild lemony flavor - easy to make. You can prepare the custard the night before because it needs at least 3 hours to cool and set properly. 

     

    The crepe shells are toasted for a crisp shell but the bottoms do get soft rather quickly. These are meant to be eaten with a fork or spoon (not a hand-held treat). If you pair one with scrambled eggs and some fruit, you have a really enjoyable and filling breakfast for just 4 WW Freestyle Points.

     

    Recipe makes 4 cups of the custard, which fills 4 nine-inch crepe shells (that have been cut in half to make 8 in total). Frieda's brand used here. I found them in the produce section of my grocery store, Shoprite (near the berries). Each half-shell uses about 1/2 cup of custard per crepe. You can store the cream in the refrigerator for a few days but it will loosen a bit. My kids happily eat any leftovers.

     

    The video below has good tips for making the shells and filling them. Nutrition information includes 1 filled crepe with 1 tbps of melted raspberries.

    Cherry Hand Pies

    Calories: 97 WW Freestyle Points: 2 each

    These hand pies are just 2 points each, so delicious and satisfying. You can eat these for breakfast or a dessert. Make them in batches and freeze in a ziplock bag - then reheat in the toaster oven.

     

    I got the frozen cherries from Trader Joes (which I know are zero points) but almost any grocery store has them. Just check the ingredients on the bag to be sure there is no added sugar.

     

    The cookie cutters used here come in very handy for a lot of recipes. You can find and purchase the following items used in this recipe:

    Pastry/Cookie Cutters (about $7.00)

    Bisquick Heart Smart baking mix (about $4.00)

    Dough scraper (about $8.00)

     

    For my friends outside the U.S.A., you can use regular self-rising flour but the Bisquick is preferred for a "cakier" crust.

     

    Recipe makes 8 hand pies. Each pie comes to 97 calories | 2 WW Freestyle Points.

    Summer Fruit Salad with Pepitas

    I promise you will love this! It makes a great side dish for Mother's day brunches, lunches or a dessert. Or just make it for a healthy delicious snack to have on hand.

     

    Note: if you make this recipe in advance, be sure to wait to add the mint leaves until you are ready to serve. All other ingredients can be prepared before hand. The Champagne Pear Vinaigrette from Trader Joe's has a little Gorgonzola in it, so I did not add cheese such as Goat Cheese or Feta to this salad.

     

    If you do not live in close proximity to Trader Joe's, you can substitute the dressing with my easy recipe for Champagne Vinaigrette. I think the points are the same but the nutrition values may differ.

     

    Recipe makes 4 servings. 147 calories per serving | 1 WW Freestyle Points.

    So moist and chocolatey. I made and revised this chocolate cake recipe 7 times to get it just right. Such a good treat for 4 points. After you slice it, I would recommend putting the extra cake in a tupperware container and freeze it so you don't eat half of the entire pan in one sitting like I did.     Just a really simple but delicious snack here. Cheddar cheese and apples go really well together. I used 1/4 cup of Shredded Sharp White Cheddar Cheese (which is 4 points) over 4 apple slices (one already eaten from the plate shown here. :D ). So each one comes to 1 point each.

     

    You can pop them in the toaster oven on broil for a minute or two, to melt the cheese.

    These smothered waffle cone bowls make a good breakfast, or a snack. The waffle bowls are just 50 calories - or 2 points each. I filled it with non-fat greek yogurt, topped with blueberries and bananas that I warmed in a small sauce pot, and sprinkled it with a teaspoon of pumpkin seeds.

     

    If you find that plain non-fat greek yogurt is very tart, the sweetness of the fruit and waffle cone in this recipe balance it out nicely.

     

    Note that the photograph makes the waffle bowl appear larger than it actually is (just being honest). I didn't try to exaggerate this, it's just how the photo came out. The actual size is similar to that of a regular cupcake.
