Artichoke Frittata

Artichoke Frittata

Whip this up in about 15 minutes. This delicious frittata is just 1 point per quarter, or 4 points for the whole thing (if you can finish it). I get the frozen artichoke hearts at Trader Joe's. Reference video for demonstration.

Total Cook/Prep time: 15 minutes

Ingredients

  • 1 package frozen artichoke hearts
  • 4 eggs
  • 3 oz shredded lite mozzarella cheese
  • 1 tbsp shaved Parmesan cheese
  • salt & pepper

Directions

Heat a frying pan on medium - high heat for about 2 minutes

While it's heating, scramble the eggs in a bowl until bubbly. Set aside.

Spray the frying pan with cooking spray.

Add the frozen artichoke hearts to the pan. Cook approximately 10 minutes. Do not rotate them too often if you want to get a little char on them. 

While the artichokes are cooking, heat the toaster oven on the broil setting and move rack to highest position.

Once the artichokes are cooked, pour the scrambled eggs into the pan.

Turn off the heat after 30 seconds.

Sprinkle with the cheese, salt and pepper.

Place the frying pan on the toaster oven rack (the door can stay open since the handle of the frying pan will stick out).

Broil about 2 minutes or until the cheese is melted.

Transfer to plate or cutting board and slice into quarters.
