I think some people might hesitate to make artichokes because they are not sure what to do with them. But they are so delicious! Especially stuffed. All the points are in the stuffing here, but when paired with a zero point protein like fish or chicken, it makes a great complete meal. Recipe makes 4 artichokes (7 points each artichoke).

Total Cook/Prep time: 1 1/2 hours


  • 4 large artichokes
  • 8 tbsp breadcrumbs (2 tbsp on each artichoke)
  • 12 tsp olive oil (3 tsp per artichoke)
  • 12 cloves garlic (minced - distributed)
  • 4 tbsp shredded Parmesan (1 tbsp on each)
  • Salt and pepper


Trim the artichokes by cutting off the stem with a sharp knife.

Use a scissor to snip off the tips of the outer leaves.

Cut 1/4 - 1/2 inch of the tip off with a sharp knife (see video)

Boil the artichokes for about 40 minutes. 

Using tongs, remove the artichoke from the water and place it face down on a plate to drain and cool.

When the artichoke is cool enough to touch, flip is right-side-up, and place it in a bowl.

Pour the oil over the artichoke and use your hands to work it into as many individual leaves as possible, trying to distribute the oil as evenly as you can

Sprinkle the garlic as evenly as possible into each leaf. Pry the leaves open if necessary.

Do the same for the breadcrumbs.

Then sprinkle on a light dusting of the parmesan, salt and pepper.

Bake at 375 for about 20 - 30 minutes (to cook the garlic and crisp the breadcrumbs).
