Asian Chicken & Cabbage Salad

This salad has a nice crunch, texture and different sweet and citrusy flavors to mix up your lunch line-up. Super light meal but tasty.

Total Cook/Prep time: 20 minutes

Ingredients

  • 2 cups shredded green cabbage
  • 1/4 cup snow peas
  • 1/2 cup cubed pineapple
  • 1 carrot (julienned or cut small)
  • 4 oz. pre-cooked grilled chicken
  • 1 scallion (sliced up)
  • chopped fresh cilantro
  • For the dressing:
  • 2 tbsp soy sauce
  • 2 tbsp lemon juice
  • 2 tsp sesame seed oil
  • 1 tsp sugar
  • 1 tsp garlic powder

Directions

Assemble the cabbage, snowpeas, pineapple, carrot, chicken, scallion and cilantro in a bowl.

Mix the dressing ingredients together in a bowl with a whisk

Drizzle the dressing on the salad
