Banana Bread

Banana Bread

This is good with a little spread of peanut butter or PB2. Store in the refrigerator for up to 7 days. Recipe makes 16 slices. 3 points per slice, or 5 points for 2 slices.

Total Cook/Prep time: 90 minutes

Ingredients

  • 1 1/2 cups flour (all purpose)
  • 1/2 cup sugar
  • 1 egg
  • 1 small container non-fat greek yogurt (6 oz container)
  • 4 medium bananas (sliced)
  • 1 tsp vanilla
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt

Directions

Preheat oven to 350

Mix sugar, egg, yogurt and vanilla in a bowl (low speed using an electric hand mixer, about 30 seconds)

Add the flour baking powder and salt

Mix with a spoon or spatula just until combined 

Fold in the bananas

Spray the bottom of a loaf pan

Spread batter into pan 

Bake for 50 minutes

Be sure to let it cool 2 hours before cutting
