Beets, Goat Cheese & Mint Salad

This is not a "diet" salad to me. This is a salad I would have any day. If you've ever had beets and goat cheese together, you will understand why.


Recipe is for one serving. 7 WW Freestyle Points with the dressing.

Total Cook/Prep time: 20 minutes


  • 4 cups arugula lettuce
  • Few ounces of pre-cooked chopped turkey breast
  • 1/4 - 1/2 cup chopped fresh mint leaves
  • 3 pre-cooked sliced beets
  • 1 clementine (peeled and separated)
  • 1 oz. crumbled goat cheese
  • 2 tbsp roasted pumpkin seeds
  • For the dressing (super simple vinaigrette):
  • 3 tbsp white vinegar
  • 1/2 tsp dijon mustard
  • 1/2 tsp sugar
  • 2 tsp oil (canola or vegetable)


Arrange the arugula, chopped turkey breast, mint leaves, beets, clementines and goat cheese in a bowl

Add the dressing ingredients in a separate bowl and mix it with a whisk

Drizzle the dressing on the salad 

Top with the pumkin seeds
