Beets, Goat Cheese & Mint Salad
This is one of my favorite flavor combinations. Inspired by Panera Bread's seasonal Watermelon Salad, the ingredients here have a very similar flavor profile. This is not a "diet" salad to me. This is a salad I would have any day. Feel free to add grilled chicken to make this more filling.
Total Cook/Prep time: 20 minutes

Ingredients

  • 4 cups arugula lettuce
  • 1/4 - 1/2 cup chopped fresh mint leaves
  • 3 pre-cooked sliced beats
  • 1/2 cup mandarin oranges
  • 1 oz. crumbled goat cheese
  • 1 tbsp sliced almonds
  • For the dressing (super simple vinaigrette):
  • 3 tbsp white vinegar
  • 1/2 tsp dijon mustard
  • 1/2 tsp sugar
  • 2 tsp oil (canola or vegetable)

Directions

Arrange the arugula, mint leaves, beats, mandarin oranges and goat cheese in a bowl

Add the dressing ingredients in a separate bowl and mix it with a whisk

Drizzle the dressing on the salad and enjoy
