Birthday Cake

Birthday Cake
I don't love using artificial sweeteners, but every now and then I do it if it's a special treat.
Total Cook/Prep time: 45 minutes


  • 1 box Pillsbury sugar-free cake mix (plus water and eggs as described on the box ingredients needed)
  • 1/2 cup applesauce
  • 6 oz lite coolwhip (which is a little less than 1 container)
  • 1 cup strawberries (sliced)
  • 1 banana (sliced)


Bake cake according to box directions, but replace oil with the applesauce.

Use 2 - 8" round pans to make a layered cake

Allow cake to cool completely (about 1 hour)

Place the first layer onto a cake plate

Put the cool whip in a large ziplock bag.

Cut the tip of the ziplock bag 

Twist the open part of the bag together and hold it closed with your hand so you can pipe the cool whip onto the cake.

Line the inside perimeter of the cake with a squeeze of cool whip (to create a little barrier so that the bananas and strawberries do not seep out the sides of the cake)

Place the sliced strawberries and bananas in the center

Place the top layer of the cake over the bottom half

Pipe remaining cool whip over the top of the cake.

Use a knife to spread it evenly over the top of the cake, then along the sides.
