Blueberry Banana French Toast Sticks

Hello readers. After some feedback on my original recipe for these french toast sticks, I revised the ingredients and technique used to make these. There is no rolling involved at all. I also included an updated, in-depth video on how to make these.

 

This recipe makes 10 six-inch sticks (2 WW Freestyle Points each). You can freeze these in a zip-lock bag and pop them in the toaster oven when you're ready to eat them. 

 

Nutritional information and WW Freestyle Points values based on 1 French Toast Stick.

 

*Information for converting flour volume from cups to grams was calculated based on the nutrition label of King Arthur All Purpose Flour. 1/4 cup = 30 grams. Multiplied by 6 for 1 1/2 cup serving to equal 180 grams.

Total Cook/Prep time: 45 minutes

Ingredients

  • Dough ingredients:
  • 1 1/2 cups self-rising flour (180 grams)
  • 1/2 cup Fage FF Greek yogurt
  • 1 egg
  • 1 tsp vanilla
  • 1 tbsp cinnamon
  • 2 bananas (sliced up in small quarters)
  • 1 cup fresh blueberries
  • Additional items:
  • Cinnamon
  • Sugar
  • 1 scrambled egg (used as a wash just before baking)

Directions

Pre-heat oven to 400

Line a large baking sheet with parchment paper.

Mix the yogurt, eggs and vanilla in a bowl using an electric mixer until well blended.

Add the cinnamon and flour. Mix it together to combine the dough.

Fold in the bananas and blueberries.

Dough will be become sticky once the bananas and blueberries are incorporated.

Spoon half of the dough into a 12" pastry bag (see video). 

Pipe the dough in 6-inch strips on a parchment-lined baking sheet. (Refill the bag with remaining dough after the first half are piped onto the baking sheet).

Bake for about 25 - 30 minutes

When the sticks come out of the oven, brush them with the egg wash and a light dusting of cinnamon and sugar

Allow the sticks to cool completely before serving
