Blueberry Banana French Toast Sticks

I was racking my brain trying to figure out grab and go breakfasts that aren't eggs. These are really good and only 3 points on WW for two of them. Recipe makes 12 sticks. You can freeze these and pop them in the toaster oven when you're ready to eat them. They freeze and re-heat well.

Nutritional information based on a 2-stick serving.

Total Cook/Prep time: 45 minutes


  • Dough ingredients:
  • 1 1/2 cups self-rising flour
  • 1 small container Fage FF Greek yogurt (6 oz container)
  • 2 eggs
  • 1 tsp vanilla
  • 1 tbsp cinnamon
  • 2 bananas (sliced up in small quarters)
  • 1 pint fresh blueberries
  • Additional items:
  • Cinnamon
  • Sugar
  • 1 scrambled egg (used as a wash just before baking)


Pre-heat oven to 400

Mix the yogurt, eggs and vanilla in a bowl using an electric mixer until well blended.

Add the cinnamon and flour. Mix it together to combine the dough.

Fold in the bananas and blueberries.

Dough will be a sticky but just go with it.

Place the dough on a floured surface.

Divide the dough in 12 pieces.

Wash and dry your hands completely.

Gently roll out each piece into a log about 10 inches long.

Place the logs on a parchment-lined baking sheet. (If you lose shape while transfering them to the baking sheet, just touch them up on the baking sheet).

Brush them with egg wash and sprinkle them with cinnamon and a pinch of sugar.

Bake for about 25 - 30 minutes
