Chicken, Apples and Cheddar Casserole

I'm not sure if you think this is an odd combination of ingredients, but if you've ever had apple pie with cheddar cheese, you may see where I'm going with this. I love apples and cheddar together so this casserole hits the spot. 287 calories | 7 WW Freestyle points. Recipe makes 6 servings.


Total Cook/Prep time: 2 hours


  • 1 whole chicken (I get the one cut up in the package to reduce roast time)
  • 2 Granny Smith apples (peeled and cut into 1/4 inch cubes - omit the core)
  • 2 cups shredded white cheddar cheese (full-fat)
  • 2 cups chicken stock
  • 1 cup unsweetened applesauce
  • 1 medium onion (diced)
  • 1 large carrot (sliced)
  • 2 stalks of celery (sliced)
  • 3 tbsp flour
  • 1 tsp powdered chicken bullion
  • 1/2 tsp ground nutmeg
  • 1/2 tsp allspice
  • 1/4 tsp salt


Preheat oven to 375.

Roast the cut-up chicken for 1 hour.

While chicken is roasting, prepare the apples and vegetables (cut, dice, etc.).

Allow the chicken to rest for 10 - 15 minutes after roasting (oven can stay on).

Remove and discard skin of the chicken.

Using a fork, pull the meat from the bones of the chicken (white and dark meat) and set aside in a bowl.

In a separate bowl, mix the chicken stock and flour together with a wire whisk until thoroughly combined.

Add the applesauce, powdered bullion, nutmeg, allspice and salt to the stock mixture. Mix to combine.

Spread the shredded chicken meat into a 9 x 13 casserole dish (or baking pan).

Add the apples, onion, carrot and celery to the pan.

Pour the liquid stock mixture into the casserole dish (it will thicken as it cooks).

Bake for 30 minutes.

Sprinkle the cheese on the top of the casserole and continue to bake another 10 minutes or so.

Cool for about 15 minutes, cut into 6 slices and serve.
