Chicken Salad-Salad

Chicken Salad-Salad
This is basically chicken salad without the bread. The photo shows pecans, but to keep the calories lower, replace the pecans with pumpkin seeds.
Total Cook/Prep time: 20 minutes

Ingredients

  • 3 cups chopped romaine lettuce
  • 1 cup arugula
  • 1/2 green bell pepper (sliced thin)
  • 4-5 raw broccoli florets
  • 1/2 cup chopped celery
  • 1 cup grapes (sliced in half)
  • 2 scallions (sliced)
  • 6 oz. grilled chicken (chopped in small pieces)
  • 8 or 9 fresh mint leaves
  • 1 tbsp pumpkin seeds
  • For the dressing:
  • 3 tbsp fat free greek yogurt
  • 1 tbsp mayo
  • juice of 1/2 lemon (or 1 tbsp white vinegar)
  • 1 tsp sugar
  • garlic powder

Directions

Assemble the salad ingredients in a bowl

Mix the dressing ingredients in a separate bowl, then drizzle onto the salad
