Chicken and White Bean Tostadas

Chicken and White Bean Tostadas

Easy and tasty weeknight meal you can make in less than 30 minutes. See video for a quick demonstration. Recipe makes 9 tostadas - 3 points per tostada - 201 calories.

Ingredients

  • 9 small white corn tortillas
  • 1 lb extra lean ground chicken
  • 1 jar salsa verde
  • 1 can white beans (rinsed and drained)
  • 1 onion (diced)
  • Shredded Mexican cheese blend (9 tbsp - distributed as 1 tbsp per tostada)
  • juice of 2 limes
  • handful of chopped cilantro
  • 2 tbsp ground cumin
  • sour cream (9 tbsp - distributed as 1 tbsp per tostada)
  • salt & pepper
  • cooking spray

Directions

Preheat oven to 400

Place the corn tortillas on a baking sheet

Bake about 4 minutes per side or until the tortillas are lightly toasted on both sides (keep oven on after toasting)

Place a large pan on the stovetop (low - medium heat)

Spray with cooking spray

Sautee the ground chicken, onions and beans for about 5 minutes (or until the chicken is no longer pink)

Add the cumin, salt and pepper to the pan of chicken and beans. Mix to combine

Add the salsa and lime juice. Mix to combine

Distribute the mixture throughout the 9 tostadas

Sprinkle each with 1 tbsp of the shredded cheese

Bake approximately 5 minutes or until the cheese is melted (you can turn the oven off now :-D )

Top each tostada with 1 tbsp sour cream and chopped cilantro
