Chocolate Mint Cake

A festive treat for St. Patty's day, and only 2 points per slice. The sprinkles are scarce per slice so I didn't count them here, so feel free to leave those out if you don't want to add them. This recipe uses Pillsbury sugar-free devils food cake mix. You can find and purchase Pillsbury Sugar Free Devil's Food Cake Mix here.

Total Cook/Prep time: 40 minutes

Ingredients

  • 1 box Pillsbury Sugar Free Chocolate Cake Mix
  • 3 eggs
  • 1 1/4 cup water
  • 1/2 cup non-fat greek yogurt
  • For the frosting:
  • 1 container lite cool whip (8 oz)
  • 1/2 tsp peppermint extract
  • few drops of green food coloring
  • chocolate sprinkles optional

Directions

Preheat oven to 325

Spray a 9 x 13 inch baking pan with cooking spray

Mix the cake mix, eggs, water and yogurt in a bowl using an electric hand mixer (about 1 minute)

Pour the batter into the baking pan

Bake about 35 minutes

Allow the cake to cool completely (about 1 hour)

Prepare the frosting by mixing the cool whip, extract and food coloring

Spread the frosting over the cake

Slice into 24 squares
