Diced Potatoes, Peppers and Onions

This is a really tasty and yummy side dish that goes well with fish, beef or chicken. You can even save the leftovers for an omelette the next day. 


Recipe makes 4 servings. One serving is about 3/4 cup.

Yield/Servings: 4 Serving Size: 3/4 cup Total Cook/Prep time: 30 minutes


  • 2 large Russet potatoes (8 oz each)
  • 2 large bell peppers (any color)
  • 1 medium onion
  • 1 tbsp vegetable oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • salt and pepper


Wash and dice the potatoes (skin on).

Once the potatoes are diced, rinse them well in a colander or mesh strainer (to remove some of the starch).

Dry the potatoes with a paper towel, set aside.

Chop/dice the onion.

Remove the inside membranes of the bell peppers. Dice the peppers and set aside.

Mix the potatoes, onions and peppers together in a large mixing bowl.

Heat a large pan on the stovetop (high heat).

Add the vegetable oil, potatoes, peppers and onions to the pan.

Sprinkle with the garlic powder, paprika, salt and pepper.

Cook for about 20 minutes (rotating and stirring every 5 minutes or so).
