English Muffin with Scrambled Eggs

Nothing revolutionary here. But it beats the drive-through version. I keep this in my breakfast line up because it's a tasty, quick option for busy work-day mornings. Hopefully one day I can quit my day job and just cook and manage this blog for a living instead. Until then, I'll be packing this up in a brown bag and eating it in the car when I'm running late.


Nutritional information excludes banana.


Total Cook/Prep time: 15 minutes


  • 1 English Muffin (3 sp)
  • 1 slice Canadian Bacon ( >1 sp)
  • 2 scrambled eggs
  • Salt and pepper
  • Banana


Heat and spray a small pan with cooking spray.

Pour the scrambled eggs into the pan and cook about 5 minutes.

Sprinkle with salt and pepper.

Toast the english muffin and assemble the sandwich.

Pack it up with a banana, or eat it at home.
