Fish Tacos
Easy delicious week-night meal. Tortillas used here are small flour tortillas. The crunchy lime cabbage slaw is a great pairing with the tender fish filets. Recipe makes 6 tacos in total.
Total Cook/Prep time: 30

  • 6 tortillas (1 sp each)
  • 6 tilapia or flounder filets
  • 3 tbsp ground cumin
  • 3 tbsp chili powder
  • 1 tbsp garlic powder
  • For the lime cilantro slaw:
  • 3 - 4 cups thinly sliced red cabbage
  • Chopped fresh cilantro
  • 3 scallions (sliced up)
  • For the lime cilantro dressing/sauce:
  • 2 tbsp mayo (7 sp)
  • 2 tbsp fat-free greek yogurt
  • 3 tbsp lime juice
  • 12 tsp chipotle seasoning
  • 1 tsp garlic powder
  • Salt and pepper

Mix the ground cumin, chili powder and garlic powder in a bowl to combine the seasoning.

Sprinkle a generous amount of the seasoning on both sides of the fish.

In a pre-heated pan sprayed lightly with cooking spray (low - medium heat), cook the fish until it is no longer translucent inside (approximately 3 minutes per side depending how thick your filets are).

Set aside.

Mix the sliced red cabbage, cilantro and scallions in a bowl.

In a separate bowl mix the dressing ingredients together.

Pour the dressing into the cabbage mixture and mix well to combine.

Assemble the fish and cabbage slaw onto the tortillas.

Garnish with a little extra cilantro and lime juice.
