Fresh Pico De Gallo
Fresh pico de gallo is zero points and goes well with so many different things such as fajitas, tacos, salads and chips.
Total Cook/Prep time: 20 minutes


  • 1 pint cherry tomatoes (sliced in half)
  • 1/2 cup corn
  • 3 scallions (sliced in thin pieces)
  • Chopped fresh cilantro
  • juice of 2 or 3 limes.


Combine ingredients in a bowl and mix well.

Store the pico de gallo in a jar or tupperware container in the refrigerator for up to 5 days. It's usually better after the first day you make it because the flavors have a chance to integrate.
