Grilled Chicken & Vegetables

Grilled Chicken & Vegetables
The only points in this grilled ensemble is for any oil used. I used a pastry brush to lightly brush a little oil onto the chicken, corn, onions and tomatoes. Recipe makes 4 servings.
Total Cook/Prep time: 40 minutes


  • 1 lb sliced chicken breast
  • 1 pint cherry tomatoes
  • 4 pieces of corn on the cobb
  • 2 - 3 onions (sliced thick)
  • 2 tbsp olive oil (distributed lightly throughout)
  • Garlic powder
  • Salt and pepper


Sprinkle the salt, pepper and garlic powder on the chicken and vegetables. 

Grill the chicken and vegetables on medium heat.

Cooking time/duration will be different for each item.

Test the chicken to be sure it is cooked through, but not over-cooked either. Ideally, once the internal temperature of the thickest part is 165 degrees, you should remove it from the grill.

I like to take the vegetables off as soon as they get a nice char.

Place items on a serving platter and brush them with the olive oil. Reapply some salt, pepper and garlic powder.
