Italian Salad

If you do not use fresh herbs to season your food, you are missing out! Not dried herbs, but fresh herbs. The fresh basil, sun-dried tomatoes, parmesan and balsamic dressing here are a wonderful combination, mimicking anti-pasta salad. I also love Arugula lettuce.

  • 2 cups chopped romaine lettuce
  • 2 - 3 cups arugula lettuce
  • Handful of sliced sun-dried tomatoes (not in oil)
  • pre-cooked grilled chicken (seasoned with just S&P and garlic powder)
  • 1 oz. shaved Parmesan cheese
  • 6 kalamata olives
  • Fresh raw broccoli florets (5 or 6 florets)
  • Fresh basil leaves
  • Balsamic Vinaigrette


Assemble the ingredients in a bowl

Drizzle with the dressing
