Lentil Soup

Lentil Soup
Easy, yummy and healthy lunch to heat up on busy weekdays if you make it in advance.
Total Cook/Prep time: 30 minutes

Ingredients

  • 2 quarts chicken broth
  • 2 cans Goya lentils
  • 4 carrots (peeled and diced)
  • 6 celery stalks (diced)
  • 1 medium onion (diced)
  • 1 tbsp olive oil
  • 1 tbsp ground cumin
  • 1 tbsp garlic powder
  • salt and pepper

Directions

In a stock pot, sautee the onions in the olive oil.

Add the broth and remaining ingredients.

Simmer for about 45 minutes, stirring occasionally, or until the carrots and celery are cooked.
