Mini Pizza

Mini Pizza

These mini pizzas are quick, easy and delicious. They make a great party appetizer or a fun dinner the kids will love. I used a 3 inch round cookie cutter to shape the crust. Shown here is shaved Parmesan and basil on some, and 1/2 oz of mozzarella on the others. You can find the recipe for zero point marinara sauce on the website, in the category "Sides, Sauces and Dressing" or just use the search bar at the top of the page. 2 points per pizza. Recipe makes 12 mini pies.

Total Cook/Prep time: 30 minutes


  • For the dough:
  • 1 cup fat-free Greek yogurt
  • 1 cup self-rising flour
  • For the toppings:
  • 1 cup pre-made zero point marinara sauce
  • 6 tbsp. shaved Parmesan cheese
  • a few fresh basil leaves
  • 3 oz mozzarella cheese


Pre-heat oven to 425

Line a large baking sheet with parchment paper

Mix the flour and yogurt in a bowl until it forms a ball of dough.

Place the ball of dough on a lightly floured surface

Using a rolling pin, roll the dough out to be about 1/4" flat (you can divide the dough in smaller pieces first to make it easier)

Use a 3" cookie cutter to cut out 12 circles of dough (you will need to re-roll the scraps to get the full 12 circles)

Pre-bake the crusts for 10 minutes or so

Remove the pizza crusts from the oven and top with cheese and basil (1/2 oz mozzarella per pizza, or 1 tbsp shaved parmesan)

Continue baking the pizza until the sauce is warm and the cheese is melted (about 10 more minutes)
