Mix and Match Salad
I change my mind a lot about what I feel like eating each day, so instead of preparing a specific set of salads on meal prep day, I wash and cut up various items to mix and match throughout the week. I store it in zip lock bags or tupperware containers.

Ingredients

  • Fresh herbs
  • different types of lettuce
  • legumes
  • chicken
  • shrimp
  • raw vegetables
  • cheese
  • nuts
  • crushed crackers

Directions

Typical items that go well together as an example are:

Arugula lettuce, beets, goat cheese, mandarin oranges and fresh mint leaves

Romaine lettuce, avocado, water chestnuts, carrots, scallions, cilantro, chicken

Mixed baby greens, sun-dried tomatoes, fresh basil leaves, feta cheese
