No Bake Snack Bars

No Bake Snack Bars

A tasty, chewy grab-and-go snack or breakfast. You can whip these up in less than 30 minutes. To prevent burning, melt the marshmellows the same way you would chocolate. Place a bowl on top of simmering water and place the marshmallows in the bowl. See video for demonstration. Recipe makes 8 servings.

Total Cook/Prep time: 30 minutes


  • 2 cups puffed wheat cereal
  • 2 cups puffed popcorn cereal
  • 3 cups mini marshmallows
  • 1/2 cup pomegranate seeds
  • 1/2 cup roasted pumpkin seeds
  • 1 tbsp cinnamon
  • dash of salt


Melt the marshmallows:

Heat 3 cups of water in a pot on the stove (low - medium heat)

Spray a metal bowl with cooking spray and place it on top of the hot water

Add the marshmallows and mix as they start to melt. (I use a skewer to mix because I lose a lot of marshmallow on a spoon or spatula due to sticking. And when I'm counting calories or points - I want every last bit I can get) (Smiley face).

When the marshmallows are fully melted, turn off the heat and set aside (they will stay warm in the bowl over the water).

In a large separate bowl, add the cereal, pomegranate seeds, pumpkin seeds, cinnamon and dash of salt

Pour the melted marshmallows into the bowl and mix to combine.

Place the mixture into an 8 x 8" baking dish sprayed with cooking spray.

Spray your hands with cooking spray and press the mixture down firmly.

Allow it to set at room temperature for 2 hours.

Cut the bars into 8 peices. 

You may need to adjust the form on them slightly if they are a little loose.
