Poppyseed Chicken & Sun-dried Tomatoes Sandwich
Just a really simple mix up on the ordinary grilled chicken sandwich.
Total Cook/Prep time: 15 minutes

Ingredients

  • 2 slices light bread (40 calorie slices)
  • 6 - 8 oz. precooked grilled chicken
  • 1 cup baby kale
  • 1/4 cup sliced sun-dried tomatoes (not in oil)
  • sprinkle of poppy seeds
  • 1 tsp olive oil
  • 1 tsp lemon juice

Directions

Lightly toast the bread.

In a bowl, mix the baby kale, olive oil and lemon juice.

Sprinkle the chicken with poppyseeds.

Assemble the sun-dried tomatoes, chicken and kale onto the bread.
