Roasted Chicken

Roasted Chicken
If you're counting calories, be sure to consider any fat that might sneak in the juices here, the wine used to baste it, or any dark meat.
Total Cook/Prep time: Up to 2 hours

Ingredients

  • 1 whole roaster chicken
  • 2 Granny Smith Apples
  • 1 cup peas
  • 3 carrots
  • 1 medium onion
  • 1 cup white cooking wine
  • Salt
  • Pepper
  • Garlic Powder

Directions

Preheat oven according to the directions on the label of the chicken.

Rinse the raw chicken and take out the gibblets from the center. 

Place chicken in a roasting pan and add the white cooking wine to the pan.

Cut the apples (with skin) into cubes.

Dice the onions.

 I like to leave my carrots whole but cut yours if you want to.

Add the apples and vegetables to the pan.

Roast according to the chicken label directions.

Remove from oven and allow the chicken to rest for about 15 minutes before slicing.

After slicing the chicken and plating it, pour the wine juice over the chicken.
