Shrimp Tacos

Shrimp Tacos

These baja style tacos make it easy to stay healthy and focused. They are delicious, easy and light. Tortillas used in here are small white tortillas. Recipe makes 6 tacos.

Total Cook/Prep time: 30 minutes


  • 1 small bag of frozen shrimp (pre-cooked is fine)
  • 6 small tortillas
  • 3 cups thinly sliced (or diced) green cabbage
  • 3 scallions (sliced up)
  • 3 tablespoons chopped fresh cilantro
  • For the sauce and seasoning:
  • 3 tbsp fat-free greek yogurt
  • 1 tsp mayo
  • 3 tbsp fresh lime juice
  • 1 tsp garlic powder
  • 1 tbsp ground cumin
  • 1 tbsp chili powder
  • salt and pepper


Carefully lay the corn tortillas between the grates of your toaster oven rack (so the left and right sides of the tortilla are facing downward). This is to position and toast them in a curved taco shape. Turn the toaster oven on 400 and warm them just until lightly toasted and firm (about 3 minutes).

Heat the shrimp in a pan on the stovetop (just until warm if you are using pre-cooked shrimp).

Mix the sliced cabbage and cilantro together.

Mix the sauce ingredients together and blend it into the cabbage and cilantro.

Assemble the tacos and garnish with a little more fresh cilantro, chili powder and cumin
