Smashed Acorn Squash

Smashed Acorn Squash
Note for this recipe: Once the acorn squash is cooked, the skin peels right off.
Total Cook/Prep time: 30 minutes


  • 1 small whole fresh acorn squash
  • 1 tsp butter
  • 1 tsp brown sugar
  • 1/4 tsp salt


Preheat oven to 375.

Slice the acorn squash in half and remove seeds.

Place the squash halves on a baking sheet (open sides facing down)

Bake for about 30 minutes.

Remove skin.

Mash the squash up with the salt, and place 1 - 2 cups of the mashed squash on a plate.

Spread the butter and brown sugar on top.

Let it cool off a little before eating.
