Southwestern Salad with Good Thins Corn Crackers

A very filling and tasty lunch or dinner you can eat at home, or pack up and go.

Total Cook/Prep time: 15 minutes

Ingredients

  • 3 cups chopped romaine lettuce
  • 1/2 cup canned black beans (rinsed and drained)
  • 2 oz. sliced avocado (3sp)
  • 6 oz. pre-cooked grilled chicken
  • 3 or 4 pre-cooked shrimp
  • 1/2 green bell pepper (sliced as shown)
  • a few cherry tomatoes (sliced in half)
  • 2 scallions (sliced in small pieces)
  • 10 Good Thins Corn crackers (crushed or whole) (1 sp)
  • For the dressing:
  • 2 tbsp fat-free greek yogurt
  • 1 tsp mayo (3 sp)
  • juice of 1 or 2 limes
  • 1 tsp chipotle powder
  • 1 tsp chili powder
  • 1 tsp garlic powder

Directions

Assemble the salad ingredients in a bowl.

Mix the dressing ingredients together and drizzle it on the salad.
