Sweet and Sour Meatballs

Sweet and Sour Meatballs
The chicken meatballs are zero points. Note that I deliberately leave out breadcrumbs in lean ground chicken and turkey meatballs because the meat is already dry. I find that the breadcrumbs just make it even dryer. The sweet and sour sauce recipe is 5 points for the entire batch. It coats about 25 - 1 1/2" chicken meatballs. So 5 meatballs comes to 1 point. Recipe makes about 25 chicken meatballs.

  • For the chicken meatballs:
  • 2 lbs lean ground chicken
  • 1 medium onion (diced small)
  • 1 egg
  • 1 tbsp garlic powder
  • Salt and pepper
  • For the sauce:
  • 1/2 cup pineapple juice
  • 2 tbsp white vinegar
  • 1 tbsp soy sauce
  • Juice of 1 lemon
  • 1 tsp sugar
  • 1 tbsp cornstarch (to thicken)


Start with the sauce

Mix the sauce ingredients together in a bowl and mix with a wire whisk

The sauce will look cloudy at first because of the cornstarch

Heat the sauce on the stovetop (low heat) for about 5 minutes stirring frequently with a wire whisk. The sauce will start to thicken. When it has the texture of syrup, remove it from the heat.

The sauce will thicken more as it cools.

For the meatballs:

Mix all ingredients together in a bowl (I use my hands)

Form them into 1 - 1 1/2 inch balls

Cook them in a pan on low - medium heat for about 10 - 12 minutes, rotating them as they cook

Place the meatballs in a serving bowl and pour the sauce over them.
