Taco Salad w Chipotle Lime Dressing

This is a regular in my lunch line-up. I pre-grill the chicken in advance on meal prep day. It's seasoned with a dry rub of ground cumin and chili powder. The Chipotle Lime dressing can be found in the "Sides, Sauces and Dressings" section of this site but I have also listed the dressing recipe here.

Total Cook/Prep time: 30 minutes

Ingredients

  • 3 cups chopped romaine lettuce
  • 6 oz. seasoned grilled chicken
  • 12 crushed Good Thins Corn Crackers
  • 1/4 cup corn
  • 1/4 cup black beans (rinsed and drained)
  • 3 cherry tomatoes (sliced in half)
  • 1/4 hass avocado
  • 1 scallion
  • For the dressing:
  • 3 tbsp Fage fat-free greek yogurt
  • 2 tsp mayo
  • 2 tbsp fresh lime juice
  • 4 sprigs cilantro (de-stemmed and chopped)
  • 1/2 tsp chipotle seasoning
  • 1 tsp chili powder
  • 1 tsp ground cumin

Directions

Place the romaine, chicken, beans, crackers, corn, tomatoes and avocado in a bowl

Mix the dressing and pour 2 tbsp onto the salad

Use a fork to eat it.
