Teriyaki Pork and Pineapple Skewers

These skewers are a completely delicious and easy dinner option. Recipe makes 4 skewers. Each skewer is about 5 WW Freestyle Points each if you use 3 oz of pork and 1 tbsp of Trader Joe's Soyaki Sauce. You can also use chicken to reduce the total calories and/or Freestyle SmartPoints value.

Ingredients

  • 4 boneless pork chops (3 oz. each)
  • 2 bell peppers (any color)
  • 2 onions
  • 2 cups pineapple chunks
  • Salt and pepper
  • For the teriyaki sauce:
  • I often use Trader Joe's Soyaki Sauce but if you do not live in close proximity to Trader Joe's you can use this homemade sauce:
  • 1/4 cup white vinegar
  • Juice of 1 lemon
  • 2 tbsp balsamic vinegar
  • 2 tbsp sugar
  • 1 tbsp cornstarch used to thicken sauce

Directions

Cut the 4 raw pork chops into 12 cubes. (each skewer will get 3 of the pork cubes)

Cut the bell peppers and onions (large pieces).

Assemble the skewers rotating the various ingredients on the skewer.

Make the sauce:

Mix the teriyaki sauce ingredients together in a bowl using a wire whisk.

Transfer to a small pot on the stovetop - heat on low heat for 2 - 3 minutes, stirring constantly.

Remove from heat and continue to stir for about 30 seconds.

The sauce with thicken as it cools.

Cook the skewers on the grill until the pork reaches and internal temperature of 145 degrees. 

Brush the sauce on the skewers during the last 1 or 2 minutes of cooking.

When the skewers are done cooking, give them another light brush of the sauce until the sauce is distributed throughout the 4 skewers.
