Thai Salad with Chicken Cilantro Mini Wontons

Totally delicious salad, and easy to pack up and go.

Total Cook/Prep time: 20 minutes

Ingredients

  • 2 or 3 cups of chopped romaine lettuce
  • 2 oz avocado (sliced)
  • 4 frozen chicken cilantro mini wontons
  • 8 or 9 precooked shrimp
  • 1/4 cup roasted edamame beans
  • handful of fresh cilantro leaves
  • 1/4 cup red cabbage (sliced thin)
  • For the dressing:
  • 2 tbsp soy sauce
  • 2 tsp sesame seed oil
  • 1/2 tsp sugar
  • 3 tbs fresh lemon juice
  • garlic powder

Directions

Heat the frozen chicken cilantro mini wontons in simmering water for about 5 minutes or until fully heated.

Set aside to cool for a few minutes.

In the meantime, assemble the other main salad ingredients in a bowl (lettuce, avocado, shrimp, edamame, cilantro)

In a separate bowl, mix the salad dressing ingredients with a wire whisk

Add the wontons to the salad bowl, then drizzle the dressing on top
