Tomato Soup

Tomato Soup
I used a ramekin so I could put the soup bowls in the oven on broil - to get a nice melted cheesy top. Note: Fresh basil recommended for this (not dried). Recipe makes about 6 servings.
Total Cook/Prep time: 1 hour


  • 1 can tomato puree (28 oz)
  • 1 can crushed tomatoes (28 oz)
  • 1 quart chicken broth
  • 1/2 cup Half and Half
  • 1 small onion (diced)
  • 1/2 tsp dried Thyme
  • 8 - 10 fresh basil leaves
  • Spray of olive oil
  • Salt and pepper
  • For the cheese top:
  • Light shredded mozzarella cheese (1 oz per ramekin)
  • Shaved Parmesan cheese (1 tbsp per ramekin)


Heat a pot on low heat

Spray the pot with olive oil and add the onions 

Heat the onions for about 3 - 4 minutes, stirring occasionally to be sure the onions don't burn

Add the remaining ingredients to the pot (except cheese)

Simmer about 40 minutes

Heat oven on broil setting - move rack to highest position

Distribute the hot soup into 2 ramekins

Top with the cheese and broil for about 3 - 5 minutes until the cheese is melted and slightly charred
