Heat a pot on low heat
Spray the pot with olive oil and add the onions
Heat the onions for about 3 - 4 minutes, stirring occasionally to be sure the onions don't burn
Add the remaining ingredients to the pot (except cheese)
Simmer about 40 minutes
Heat oven on broil setting - move rack to highest position
Distribute the hot soup into 2 ramekins
Top with the cheese and broil for about 3 - 5 minutes until the cheese is melted and slightly charred
