Waffle Iron Grilled Chicken
Some people have told me my waffle iron meals are creative. But I call it pure laziness. The waffle iron does a great job at grilling and giving chicken and vegetables a nice char. I like to dip the chicken in the ranch sauce shown here but use whatever dipping sauce you want. The calories and Points total stated for this meal does not include the Ranch dipping sauce (which is 1 point). Total Cook/Prep time: 20 minutes

Ingredients

  • 1 boneless skinless chicken breast
  • 1 bell pepper (cut in thirds or fourths)
  • 1 medium onion (sliced thick)
  • Salt and pepper

Directions

Lay the peppers and onions in a pre-heated waffle iron.

Close lid and let them cook for 8 - 10 minutes.

Remove from waffle iron and set aside.

Place the chicken in the waffle iron and close the lid.

Cook the chicken approximately 8 - 10 minutes (but it depends on the thickness of the chicken breast).

Place the chicken and vegetables on a plate and sprinkle with salt and pepper.
