Waffle Iron Quesadillas

Waffle Iron Quesadillas

If you find a small low-carb wrap, and use 1/4 cup low fat shredded cheese, this is a very light and tasty quesadilla.

Total Cook/Prep time: 20 minutes


  • 2 small low carp wraps
  • 1 cup chopped grilled chicken (pre-cooked)
  • 1 cup frozen spinach (heated and drained)
  • 1/4 cup low-fat shredded cheese


Pre-heat waffle iron.

Place one of the wraps on the bottom side of the waffle iron.

Place chicken, spinach, cheese onto the wrap.

Then place the remaining wrap on the top and close the waffle iron.

Grill for approximately 5 - 7 minutes or until cheese is fully melted and you can see the marks of the waffle iron grid.
