This is really just like chicken soup with more of an Italian twist. If you have never made chicken soup with a whole chicken before, I promise it's not any more preparation than if you used just chicken breasts pieces. It's really simple to put together and makes an extremely nutritious and delicious dinner you can prepare on the weekend, and reheat during the week. I prefer using a whole chicken because the bones give the broth a very good flavor. Plus the dark meat is so tender I love it in soup.

It's best if you let it simmer for about 2 hours. So plan ahead with that inactive cook time in mind.

I almost always have home-made breadsticks in the freezer and they are perfect for dipping in this stew. And shaved parmesan cheese is amazing on this.

Nutrition facts and WW SmartPoints excludes breadsticks or parmesan cheese. Although chicken breast is zero SmartPoints on Blue and Purple, there is dark-meat in this recipe, and the soup is cooked with the skin on the chicken. You can double-check the SmartPoints for this recipe using the WW Recipe Builder in the WW app. When the soup is chilled overnight in the refrigerator, you can skim the fat from the top of the broth before re-heating. I know this will reduce the amount of fat in the recipe, but I am unsure of the exact SmartPoints value so I estimated it to be 6 SmartPoints per bowl.

Hello person reading this. :-) Tonight I made this really easy and delicious Shredded Chicken Taco Pie. My kids highly recommend it.

It's very easy to make, and quick if you cook the chicken in advance. I used a pre-made Pillsbury Pie Crust dough which you can find in the refrigerator section of most large grocery stores. The package comes with 2 pie crusts, but only one is used for this recipe. The photo and recipe here feature Kraft Fat-free cheddar cheese but to be honest, I like it better with no cheese at all - and a tablespoon of sourcream instead. But that is up to you.

My favorite store-bought green salsa is Trader Joe's brand, but any green salsa will do. Here's a snap-shot of the ingredients:

This is a super quick and delicious dinner you can make any night of the week! My whole family loves these.

You can find 96% lean ground beef at Target, Aldi, or Trader Joe's. Maybe other stores carry it too, but those are the ones I know of for sure. I got Whole Wheat hamburger buns at Trader Joe's which are 3 SmartPoints each (for all WW plan colors). If you do not have a Trader Joe's in close proximity to you, you can look for Light hamburger buns at your local grocery store. Just be sure to scan the barcode to check the Points. The meat mixture for this recipe comes to 2 SmartPoints (all WW plan colors).

Alternatively, you could skip the bun all together and serve with 1/2 cup brown rice instead (making this recipe just 2 SmartPoints on Purple - or 6 SmartPoints on Blue and Green).

This is a delicious, quick and easy pizza dough. Recipe makes enough dough for 2 small personal size pizzas.

Toppings in the photo include marinara sauce, cherry tomatoes, roasted bell peppers, fresh basil and mozzarella cheese. Nutrition information and WW SmartPoints values exclude toppings.

Recipe and directions for home-made marinara sauce, can be found here.

Notes and tips: When measuring flour, don't scoop or dunk the measuring cup into the bag of flour. This will give you an over-measure of flour and add more calories to the dough. When measuring flour it's always best to weigh it, but if you don't have a kitchen scale you can gently spoon the flour into the measuring cup. Then use the back of a butter-knife to level the flour at the rim of the cup. This will give you the most accurate measurement without a scale.

A very basic but delicious soup you can make in advance and enjoy all week long. Simple, tasty and filling. It makes a good dinner when paired with breadsticks and a salad. My kids enjoy it, and I can eat leftovers for lunch the next day.

I use a whole chicken for chicken soup because the bones in the chicken give the soup a good flavor.

Tip for selecting a chicken for soup: choose Whole Young Chicken (not a "Roaster").

Recipe makes 2 servings (15 raviolis per serving). The brand of raviolis used is "Italian Village - Mini Round Cheese Ravioli". If you can't find this specific brand, you can look for mini or bite-sized cheese ravioli in the frozen section of your local grocery store. If you're counting calories, be sure to consider any fat that might sneak in the juices here, the wine used to baste it, skin or any dark meat.

Calories and WW Points depend on what parts of the chicken you eat. Please reference the WW app for specific SmartPoints values in Roasted Chicken.

SmartPoints values and Nutrition for this recipe is based on 4 oz of breast meat only.

The sauce/juice makes about 2 cups after the chicken is cooked but the amount of fat that the chicken adds to the juice varies. I typically "guesstimate" that the juice comes to 1 SmartPoint per tablespoon.

You can find the shaved beef steak in the butcher section of most grocery stores. Trader Joe's and Aldi carry it too. (See video for quick demonstration).

Keep in mind that I cook the shaved beef steak first (with just onion powder and salt) for two reasons. One is because the beef cooks faster than the peppers and onions, and two, if there is left-over beef, I can save it for sandwiches the next day and the seasoning is neutral.

You can find directions on how I cook the corn here. Just replace the fresh basil with a squirt of lime juice. You can also find my recipe for fresh pico here.

Recipe makes 6 Fajitas. WW SmartPoints and nutrition information excludes toppings (such as sour cream and cheese shown in the photo). 1 serving includes: 1 low-carb tortilla, 2 - 3 oz shaved beef steak, 1/2 cup sauteed peppers & onions, 1/4 cup salsa or fresh pico.

There are no extra special ingredients in these lean ground beef meatballs - but they are still delish. I find them to be way better than ground turkey or chicken meatballs. I used Trader Joe's 96% lean ground beef for these. But I've also seen 96% lean ground beef at Target and Aldi.

For best results, don't overmix. Ground beef can become dense and tough if you over mix it. Give the ingredients just a gentle mix until combined to give the meatballs a more crumbly bite.

You might catch one of my recipes on their website which I'm very excited about.

It got me thinking about all the different ways to enjoy fish. I'll start by telling you a number of reasons why I love the frozen fish from Aldi:

    1. It's affordable.

    2. It's great quality and sustainably sourced.

    3. It's extremely convenient. It comes in individual portions I can take out as needed. It defrosts within 15 minutes if you use the "quick thaw" instructions.

    4. It cooks quickly.

    5. High protien, Zero Points on WW.

    6. It's versatile, delicious and satisfying.

For this recipe, I used the Fremont brand Tilapia. The light mayo used in this recipe provides a similar flavor to tartar sauce, so it works perfectly with the fish. The side dish shown is diced potatoes with peppers and onions. You can find the recipe for the Potatoes, Peppers and Onions here.

Recipe makes 2 servings (4 pieces of fish). Serving size is 2 pieces (or 6 oz). WW SmartPoints and nutrition information excludes side dishes shown in the photo.

This delicious seafood stew has clams, mussels and shrimp. A great dish for Christmas eve! No one will suspect it's WW friendly.

Scrubbing the clams and mussels are a little tedious, but when you get past that part, the rest of this recipe is a breeze. And it's so good.

I created this recipe for my friends and partners at Seafood at Home. They are wonderful sponsors who support me and allow me to keep doing what I do. Besides this, they have so many healthy recipes and ideas for all things seafood.

Recipe makes 8 servings. Each serving includes 3 clams, 5 muscles, 5 shrimp and about 1 1/4 cups of broth.

SmartPoints and nutrition facts exclude the bread shown in the photo above.
