    Food and friendship seem to go hand and hand, and this post reflects just that... a new partnership with Seafood at Home. They are true foodies at heart with focus on recipes that are quick, easy and most of all healthy and delicious. You might catch one of my recipes on their website which I'm very excited about.

     

    It got me thinking about all the different ways to enjoy fish. I'll start by telling you a number of reasons why I love the frozen fish from Aldi:

    1. It's affordable.

    2. It's great quality and sustainably sourced.

    3. It's extremely convenient. It comes in individual portions I can take out as needed. It defrosts within 15 minutes if you use the "quick thaw" instructions.

    4. It cooks quickly.

    5. High protien, Zero Points on WW.

    6. It's versatile, delicious and satisfying.

     

    For this recipe, I used the Fremont brand Tilapia. The light mayo used in this recipe provides a similar flavor to tartar sauce, so it works perfectly with the fish.     You can find the shaved beef steak in the butcher section of most grocery stores. Trader Joe's carries it too. (See video for quick demonstration). 1 serving of this recipe, WW Freestyle Points and nutritional values for this include: 1 small flour tortilla (2 Points), 4 oz shaved beef steak (3 Points), 1/2 cup sauteed peppers & onions (zero Points), 1/4 cup salsa (zero Points). 

     

    Keep in mind that I cook the shaved beef steak first (with just onion powder and salt) for 2 reasons. One is because the beef cooks faster than the peppers and onions, and two, if there is left-over beef, I can save it for sandwiches the next day and the seasoning is neutral.

    This is a very basic, but delicious zucchini parm recipe you can make in less than 30 minutes if you have the marinara sauce prepared in advance. Just heat the sauce, sautee the zucchini, add the cheese, then broil and add sauce. I don't like to turn my regular oven on in the summer time, so I used my toaster oven to broil these, but you can use whichever method you prefer.

    There are no fancy ingredients in these real ground beef meatballs - but they are still delish. I find them to be way better than ground turkey or chicken meatballs. I used Trader Joe's 96% lean ground beef to keep these 3 WW Freestyle Points for four meatballs.

     

    If you can't find 96% lean ground beef, you can still enjoy four meatballs for 5 WW Freestyle Points (using 93% lean ground beef). Paired with this Zucchini Parm recipe, it's an 8 Point dinner for four meatballs and three slices of the zucchini.

    Just 6 WW Freestyle Points for this cheeseburger that has real ground beef, a normal size bun and a slice of Velveeta cheese.

     

    I used Trader Joe's brand 96% lean ground beef (2 sp), Trader Joe's Whole Wheat hamburger buns (3sp), a slice of Velveeta cheese (1 sp), pickles, lettuce and tomato! The beef is not crazy juicy but not terribly dry either. It's a good tasty burger for weeknight summer grilling for sure.

     

    Recipe makes 4 burgers. 6 WW Freestyle Points each. Serve with corn on the cobb, grilled vegetables or whatever else you like.

    Bacon Wrapped Grilled Salmon with Cucumber Salad

    I got these re-usable copper grill mats to make all kinds of goodies on the grill this summer. You can get 3 of them for about $10, and can use them for baking too. The grill mat is essential for this recipe so that the fat from the Center Cut bacon doesn't drip onto the grill and produce smoke and flames during cooking. 

     

    You can find and purchase Copper Grill Mats on Amazon.

     

    NOTES: the salmon will be cooked well done. I usually like my salmon slightly undercooked, but in this case, it was more desirable to get the bacon crisp. If you allow the Lemon Vinaigrette dressing from the cucumber salad to seep onto the salmon, it's even better.

     

    Alternatively, you can give the bacon a head start by cooking it in a pan for just a bit (not fully crisp), and then wrap it around the salmon - which will reduce the grill time.

     

    Recipe makes 4 servings (2 pieces of the fish with 1 slice of bacon each, 3/4 cup of the cucumber salad with 2 tbsp of Lemon Vinaigrette dressing). 4 WW Freestyle points per serving.

    Well, the dressing used for the coleslaw is my own recipe and the reality of life's demands means sometimes I can't break out my mandolin to shred fresh cabbage and assemble home-made crab cakes. So Trader Joe's it is.

    I made this dinner using a few different recipes listed on my site. Home-made breadsticks, imitation Olive Garden salad, Balsamic dressing and 2 ingredient dough pizza. This was a meal the whole family enjoyed.

    Originally, I made these chicken nuggets with 99% lean ground turkey, but to be honest, they were dry and I found them to be gross. So for this recipe, I used 93% lean ground chicken and these nuggest are tasty and good. Plus this is a very kid-friendly meal. You can make the nuggets in batches and freeze them for future meals. 

     

    For the fries, soaking the potatoes removes some of the starch so the fries bake up crisp. 

     

    Recipe makes 4 servings. 24 chicken nuggets in total (4 servings of 6 chicken nuggets) and about 60 fries (4 servings of 15 fries). The total nutritional information and points value for this recipe as a whole, include 4 tbsp of oil even though it's being "sprayed" on both the nuggets and the potatoes. Nutrition values and points EXCLUDE barbecue sauce or condiments.

    This recipe makes just 1 serving but feel free to multiply as needed. Serving size is 6 oz of fish (1 - 2 pcs.), 2 tbsp chili lime dip, 1/2 cup white rice. Nutrition values exclude cucumbers, asparagus and carrots.
