  • Pesto Marinated Grilled Chicken

    Pesto Marinated Grilled Chicken

    Hello person reading this! This is extremely delicious and versatile grilled chicken you can use in many ways throughout the week. You can use olive oil instead of the mayonnaise called for in this recipe but I use mayonnaise for a few reasons. It doesn't burn as easily as olive oil. It also integrates with the lemon juice a little better - and I like the overall flavor it gives to this chicken.


    For best results, do not over-cook the chicken. Actual cook time will depend on how thick the chicken breast is but typically it is just a few mintues per side. I usually flip the first side of the chicken when I see the outer rim of the chicken change in opacity. The outer edges of the chicken change from pink to a whiter color. The second side will need about the same amount of time as the first, but use a meat thermometer to determine the internal temperature of the chicken which should be 165 degrees F. 


    Recommended time for marinating in the refrigerator is 45 minutes - 1 hour. You can let it marinate longer but it affects the texture of the chicken, and I find the flavor to be too lemony if it marinates for too long.


    Note: If you use boneless, skinless chicken thighs (instead of chicken breast), you can omit the mayonnaise (or olive oil) all together. 



    You can prepare and cook this in advance to use it for sandwiches, salads, wraps or on its own with vegetables or another side dish.

    This is really just like chicken soup with more of an Italian twist. If you have never made chicken soup with a whole chicken before, I promise it's not any more preparation than if you used just chicken breasts pieces. It's really simple to put together and makes an extremely nutritious and delicious dinner you can prepare on the weekend, and reheat during the week. I prefer using a whole chicken because the bones give the broth a very good flavor. Plus the dark meat is so tender I love it in soup.


    It's best if you let it simmer for about 2 hours. So plan ahead with that inactive cook time in mind.


    I almost always have home-made breadsticks in the freezer and they are perfect for dipping in this stew. And shaved parmesan cheese is amazing on this. 


    Nutrition facts and WW SmartPoints excludes breadsticks or parmesan cheese. Although chicken breast is zero SmartPoints on Blue and Purple, there is dark-meat in this recipe, and the soup is cooked with the skin on the chicken. You can double-check the SmartPoints for this recipe using the WW Recipe Builder in the WW app. When the soup is chilled overnight in the refrigerator, you can skim the fat from the top of the broth before re-heating. I know this will reduce the amount of fat in the recipe, but I am unsure of the exact SmartPoints value so I estimated it to be 6 SmartPoints per bowl.

    Hello person reading this. :-) Tonight I made this really easy and delicious Shredded Chicken Taco Pie. My kids highly recommend it. 


    It's very easy to make, and quick if you cook the chicken in advance. I used a pre-made Pillsbury Pie Crust dough which you can find in the refrigerator section of most large grocery stores. The package comes with 2 pie crusts, but only one is used for this recipe. The photo and recipe here feature Kraft Fat-free cheddar cheese but to be honest, I like it better with no cheese at all - and a tablespoon of sourcream instead. But that is up to you. 


    My favorite store-bought green salsa is Trader Joe's brand, but any green salsa will do. Here's a snap-shot of the ingredients:

    This is a super quick and delicious dinner you can make any night of the week! My whole family loves these.


    You can find 96% lean ground beef at Target, Aldi, or Trader Joe's. Maybe other stores carry it too, but those are the ones I know of for sure. I got Whole Wheat hamburger buns at Trader Joe's which are 3 SmartPoints each (for all WW plan colors). If you do not have a Trader Joe's in close proximity to you, you can look for Light hamburger buns at your local grocery store. Just be sure to scan the barcode to check the Points. The meat mixture for this recipe comes to 2 SmartPoints (all WW plan colors).


    Alternatively, you could skip the bun all together and serve with 1/2 cup brown rice instead (making this recipe just 2 SmartPoints on Purple - or 6 SmartPoints on Blue and Green).

    Notes and tips: When measuring flour, don't scoop or dunk the measuring cup into the bag of flour. This will give you an over-measure of flour and add more calories to the dough. When measuring flour it's always best to weigh it, but if you don't have a kitchen scale you can gently spoon the flour into the measuring cup. Then use the back of a butter-knife to level the flour at the rim of the cup. This will give you the most accurate measurement without a scale.

    You can find the shaved beef steak in the butcher section of most grocery stores. Trader Joe's and Aldi carry it too. (See video for quick demonstration). 


    Keep in mind that I cook the shaved beef steak first (with just onion powder and salt) for two reasons. One is because the beef cooks faster than the peppers and onions, and two, if there is left-over beef, I can save it for sandwiches the next day and the seasoning is neutral.

    There are no extra special ingredients in these lean ground beef meatballs - but they are still delish. I find them to be way better than ground turkey or chicken meatballs. I used Trader Joe's 96% lean ground beef for these. But I've also seen 96% lean ground beef at Target and Aldi.


    For best results, don't overmix. Ground beef can become dense and tough if you over mix it. Give the ingredients just a gentle mix until combined to give the meatballs a more crumbly bite.

    I made this dinner using a few different recipes listed on my site. Home-made breadsticks, imitation Olive Garden salad, Balsamic dressing and 2 ingredient dough pizza. This was a meal the whole family enjoyed.

    Originally, I made these chicken nuggets with 99% lean ground turkey, but to be honest, they were dry and I found them to be gross. So for this recipe, I used 93% lean ground chicken and these nuggest are tasty and good. Plus this is a very kid-friendly meal. You can make the nuggets in batches and freeze them for future meals. 


    For the fries, soaking the potatoes removes some of the starch so the fries bake up crisp.
