Asian Inspired Salad

Here's to staying healthy all summer long! This salad is a delicious side dish to take to summer barbecues. Any Asian-style dressing such as Sesame Ginger, or Thai Peanut Vinaigrette will work well. I sometimes do a simple home-made dressing mix of lemon juice, soy sauce, toasted sesame seed oil and a small dash of sugar.


Recipe serves about 15 people. Zero WW Freestyle Points (excluding the dressing).

Total Cook/Prep time: 30 minutes


  • About 3 heads Romaine Lettuce (chopped)
  • 6 - 8 oz pre-cooked grilled chicken (sliced or chopped)
  • 1 can mandarin oranges (drained)
  • 1 - 2 cans water chestnuts (drained)
  • large handful fresh cilantro leaves
  • 4 stalks celery (sliced)
  • 1 cucumber (sliced)
  • 4 scallions (sliced)


Assemble the ingredients in a large bowl.

Serve the dressing on the side, or pour and toss together just before serving.
