Instead of hitting the Wendy's drive-through, you can make your own baked potato with broccoli, cheese and chicken.
Serving size is 1/2 potato. Recipe makes 2 servings.
Bake the potato at 375 for about 45 minutes (or microwave for about 7 - 8 minutes)
Steam or microwave the broccoli florets
Chop or shred the grilled chicken into peices
In a small dip-sized bowl, melt the velveeta cheese and 1 tbsp skim milk in the microwave for about 20 seconds (or just until melted). Stir to incorporate the skim milk and make it creamy.
Slice the potato in half.
Distribute half the chicken, broccoli, velveeta cheese, salt and pepper onto each half of the potato
