This is good with a little spread of peanut butter or PB2. Store in the refrigerator for up to 7 days.
Recipe makes 16 slices. 1 slice per serving.
Preheat oven to 350
Mix sugar, egg, yogurt and vanilla in a bowl (low speed using an electric hand mixer, about 30 seconds)
Add the flour baking powder and salt
Mix with a spoon or spatula just until combined
Fold in the bananas
Spray the bottom of a loaf pan
Spread batter into pan
Bake for 50 minutes
Be sure to let it cool 2 hours before cutting
