Bananas in a Blanket

A new family favorite in my house. When the bananas are baked, they become creamy and sweet like a pastry filling. Essentially, you just wrap 2 ingredient dough strips around a banana - and bake. 

Yield/Servings: 6 Serving Size: 1 banana blanket Total Cook/Prep time: 45 minutes

Ingredients

  • For the Dough:
  • 1/2 cup (60 grams) self rising flour
  • 1/3 cup non-fat Greek Yogurt
  • 3 bananas
  • sprinkle of cinnamon
  • sprinkle of allspice
  • small sprinkle of sugar (for outside only)

Directions

Mix flour and yogurt in a bowl until well combined.

Allow the dough to rest about 20 minutes

Peel and slice each banana in half. Set aside.

Preheat oven to 400 degrees F.

Sprinkle light dusting of flour on the work surface.

Roll the dough out into a 6" x 8" oval

Trim the edges for a rectangular shape (optional step)

Cut the dough into 6 strips

Sprinkle with the cinnamon and allspice

Wrap the dough strips around the banana halves

Place them on a parchment lined baking sheet

Sprinkle with more cinnamon, allspice and a light sprinkle of sugar

Bake 20 - 25 minutes

Allow them to cool at least 30 minutes before serving.
