Better than Subway - Sweet Onion Teriyaki Sub

I am a huge fan of Subway's Sweet Onion Teriyaki Sub. So I made my own. This version is all that! I highly recommend the Amoroso's club rolls from Aldi for this. They are soft and awesome and 4 SmartPoints on all plans.

Recipe makes 1 serving - with leftover Sweet Onion Teriyaki Sauce to save for use on other dishes throughout the week.

Yield/Servings: 1 Serving Size: 1 sandwich Total Cook/Prep time: 20 minutes

  • 3 oz grilled chicken breast strips (I use pre-cooked frozen chicken strips for this
  • such as Perdue or Trader Joe's brand)
  • 1 Club Roll (Aldi's - Amoroso's Club Rolls used here)
  • handful of chopped lettuce
  • 2 slices tomato
  • 1 pickle (sliced)
  • a few pickled banana peppers
  • 2 - 3 slices cucumber
  • 4 slices red onion
  • 2 tbsp sweet onion teriyaki sauce
  • For the Sweet Onion Teriyaki Sauce:
  • 1/4 cup white vinegar
  • juice of 1 lemon
  • 2 tbsp balsamic vinegar
  • 2 tbsp sugar
  • 1 tsp onion powder
  • 1 tbsp cornstarch used to thicken sauce

Mix the sauce ingredients in a bowl with a wire whisk

Heat the sauce in a small pot on the stovetop (low heat, stirring constantly about 2 - 3 minutes)

Remove from heat

Preheat a pan/skillet on the stovetop (medium heat)

Add the frozen chicken strips to heat. Sautee about 10 minutes (rotating and flipping a few times in between)

Remove chicken from heat. Add 2 tbsp of the sauce to the chicken and mix together.

On a separate plate, assemble the lettuce, tomato, pickle, banana peppers, cucumber and red onion on the Club roll

Add the chicken and serve
