Black Bean & Tomato Salad

This black bean & tomato salad is so versatile. It makes a really tasty dip, side dish, topping on tacos, or just by itself. It really easy to make and zero points for the whole bowl here.

 

I enjoy it with Sanissimo Baked Corn Cracker Bites (20 crackers for 2 points). 

 

Recipe makes 4 servings. 1 cup per serving.

Ingredients

  • 2 cups grape tomatoes (sliced in half)
  • 1/2 cup corn (frozen / thawed)
  • 1/2 cup black beans (canned - rinsed and drained)
  • 1/4 green bell pepper (diced)
  • 2 scallions (sliced)
  • handful of chopped fresh cilantro
  • juice of 2 or 3 limes
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • salt and pepper

Directions

Mix ingredients together in a bowl

It's actually better the next day, once the flavors have had a chance to incorporate
