Chicken & Apple Slaw Wrap

The green apple slaw gives this wrap sweet and tangy flavor, and a little crunch. I used parchment paper around the wrap to hold this together and prevent it from spilling out the bottom. The wrap is a small low-carb whole wheat tortilla for 1 SmartPoint. The shredded chicken was left over from a roaster I made the night before. 

Yield/Servings: 1 Serving Size: 1 wrap Total Cook/Prep time: 30 minutes


  • For the slaw:
  • 1 - 2 green apples (diced to equal about 1 1/2 cups)
  • 1 finely grated carrot
  • 1 stalk of celery (finely chopped)
  • 2 scallions (sliced)
  • handful of chopped fresh cilantro
  • juice of 1 or 2 lemons
  • 1 tbsp mayo (regular)
  • 1 tsp sugar
  • salt and pepper
  • For the wrap:
  • 1 cup shredded chicken
  • 1/2 cup arugula lettuce
  • 1 small low-carb whole wheat wrap


Place the apple slaw ingredients in a bowl and mix to combine.

Assemble the slaw, chicken and lettuce in the whole wheat wrap.

Roll it up and enjoy.
