Originally, I made these chicken nuggets with 99% lean ground turkey, but to be honest, they were dry and I found them to be gross. So for this recipe, I used 93% lean ground chicken and these nuggest are tasty and good. Plus this is a very kid-friendly meal. You can make the nuggets in batches and freeze them for future meals.
For the fries, soaking the potatoes removes some of the starch so the fries bake up crisp.
Recipe makes 4 servings. 24 chicken nuggets in total (4 servings of 6 chicken nuggets) and about 60 fries (4 servings of 15 fries). The total nutritional information and points value for this recipe as a whole, include 2 tbsp of oil even though oil is being "sprayed" on both the nuggets and the potatoes. Nutrition values and points exclude barbecue sauce or condiments.
Prepare the french fries by washing and cutting the potatoes - and allowing them to soak in a bowl of cold water for at least 2 hours. (reference quick video demonstration above)
Prepare the chicken nuggets:
Turn oven on broil and move rack to highest position
Place the breadcrumbs in a bowl
In a separate bowl, mix the ground chicken, egg, salt and garlic powder
Form a small ball of the meat into a nugget shape, and cover with breadcrumbs
Repeat for all 24 nuggets.
Place them on a parchment lined baking sheet and spray both sides of the nuggets with cooking spray. Sprinkle with salt.
Bake/broil the nuggets for 6 minutes.
Use tongs to flip them and continue to broil for 3 minutes more.
Remove from oven and set aside.
Drain the potatoes and pat dry with a paper towel.
Place the potatoes on a parchment lined baking sheet.
Spray with cooking spray. Sprinkle with salt and pepper.
Broil the potatoes for 12 - 15 minutes.
Use tongs to flip them and continue to broil for 5 - 10 minutes more.
