Chicken Sandwich w Apples & Grilled Onions

A little something different to mix up your lunch line-up. The apples and onions are sliced and heated in a pan on the stovetop to give it a nice little carmelization. The dressing is Trader Joe's Champagne Pear Vinaigrette. If you don't have a Trader Joe's nearby, you can mix up something similar with this home-made Champagne Vinaigrette Recipe here.

Recipe makes 1 serving. WW SmartPoints and Nutrition information determined using 2-ingredient dough recipe and Trader Joe's Champagne Pear Vinaigrette dressing (not the home-made version).

Yield/Servings: 1 Serving Size: 1 sandwich Total Cook/Prep time: 15 minutes


  • 3 oz pre-cooked grilled chicken
  • 1 small 2-ingredient dough bagel (or 1 Thomas' Bagel Thins)
  • 1/2 green apple (sliced)
  • 1/4 medium onion (sliced)
  • Small handful of chopped romaine lettuce
  • 2 tbsp. Champagne Vinaigrette


Heat a pan on the stovetop (medium heat)

Spray with cooking spray

Add apple slices and onions

Heat for about 4 - 5 minutes, flipping and rotating once or twice in between

Remove the apples and onions from the pan

Add the chicken to re-heat briefly

Assemble the sandwich by placing the lettuce, chicken, apple slices, onions and dressing on the bagel
