This is a cute little treat for birthday parties or a fun snack. I think these have a bit more moisture than similar recipes I've tried that use applesauce in place of oil. Regular Pillsbury Devil's food cake mix used here (not sugar free).
Recipe makes 48 mini cupcakes. 1 mini cake per serving. WW SmartPoints and nutrition values exclude the additional banana slices shown in the photo (for topping).
Preheat oven to 350
Spray 2 mini cupcake tins (sets of 24 cavities) with cooking spray, or use small paper liners
Crush or mash the bananas in a bowl
Mix the bananas, cake mix, yogurt, and water in a bowl
Distribute the cake mix into the cupcake sections (filling each cavity 3/4 full)
Bake for about 15 minutes
Allow cupcakes to cool, then add 1 - 2 teaspoons of whipped topping and/or a sliced banana
