You can use this light and fluffy pistachio cream on these mini chocolate cakes, or on chocolate pizzelles. Or use it as a dip for strawberries.
Recipe makes 48 pieces. 2 mini cakes per serving.
Mix the cake mix ingredients together in a bowl until well blended.
Heat a frying pan or pancake griddle on low heat.
Spray the pan with cooking spray.
Spoon 1 teaspoon of the batter on the hot pan or griddle.
Flip like a pancake after a minute or so. You should get about 48 mini cakes.
Set aside and mix the cream ingredients
