Chocolate Pistachio Bites

You can use this light and fluffy pistachio cream on these mini chocolate cakes, or on chocolate pizzelles. Or use it as a dip for strawberries.


Recipe makes 48 pieces. 2 mini cakes per serving.

Yield/Servings: 24 servings Serving Size: 2 mini cakes Total Cook/Prep time: 20 minutes


  • For the mini cakes:
  • 1 cup of boxed chocolate cake mix (box mix comes with 3 cups
  • just use 1 cup)
  • 2 eggs
  • 1/2 cup water
  • 2 tbsp unsweetened cocoa powder
  • For the cream:
  • 3/4 cup fat free ricotta cheese
  • 6 oz lite cool whip (which is 3/4 of a regular size 8 oz container)
  • 1 tsp almond extract
  • few drops of green food coloring


Mix the cake mix ingredients together in a bowl until well blended.

Heat a frying pan or pancake griddle on low heat.

Spray the pan with cooking spray.

Spoon 1 teaspoon of the batter on the hot pan or griddle.

Flip like a pancake after a minute or so. You should get about 48 mini cakes.

Set aside and mix the cream ingredients
