One of my favorite recipes on this site. Just give it a try. They are easy to make and out-of-the-park delicious.
Notes for this recipe: 1. The cocoa cinnamon sugar mixture makes more than needed to cover 4 pretzels (a little more than double). You can store the leftover cocoa cinnamon sugar in a zip lock bag and sprinkle on oatmeal or baked apples. 2. Fage brand greek yogurt recommended because it is considerably thicker than any other greek yogurt I have used. It makes a better dough overall. 3. You can make the dough in advance and store it in the refrigerator overnight

Mix the flour, baking soda and salt in a bowl
Add yogurt and mix to incorporate into a ball of dough
Cover the dough with plastic wrap and let it rest about 30 minutes
Preheat oven to 400 degrees F
Line a baking sheet with parchment paper
Mix the topping ingredients together in a small bowl and set aside (i.e., sugar, cocoa powder, cinnamon and salt)
Prepare the egg wash by scrambling the egg, water and salt in a separate bowl and set aside.
Place the dough on a lightly floured work surface
Split into 4 equally sized pieces
Roll each piece into a rope of about 18" - 22" long
Shape each rope into a pretzel shape (see video)
In a small, 1 quart pot, bring water and baking soda to a boil
Reduce heat to a simmer
Use a spatula to insert the first pretzel into the water
Remove the pretzel onto the parchment lined baking sheet when it starts to float (about 30 seconds)
Repeat for all 4 pretzels
Sprinkle both sides of the pretzels with a light coating of the cocoa cinnamon sugar
Bake for about 25 minutes
The pretzels will look very dark due to the cocoa powder and cinnamon
Brush with egg wash and allow them to cool about 30 minutes before serving
