This coleslaw makes a good side dish any time of year. I especially like it with fish.

 

Recipe makes 5 servings. Serving size is 1/2 cup. 

Yield/Servings: 5 servings Serving Size: 1/2 cup Total Cook/Prep time: 15 minutes

Ingredients

  • 2 cups sliced green cabbage (sliced in very thin strips)
  • 1/2 cup sliced purple cabbage (very thin strips)
  • 1/2 medium onion (diced small)
  • 1 - 2 carrots (julienne cut)
  • Salt & Pepper
  • For the Dressing:
  • 3 tbsp mayonnaise
  • Juice of 1 - 2 lemons
  • 2 tsp sugar

Directions

Toss the cabbage, onions and carrots in a bowl

In a separate bowl, mix the dressing ingredients together

Pour the dressing onto the cabbage and mix to combine

Add a sprinkle of salt and pepper

That's it.
